Job Summary (Essential Functions)

The Executive Sous Chef will be the second in command in the kitchen, following the Executive Chef's specifications and guidelines. The successful candidate will employ its culinary and managerial skills in order to play a critical role in maintaining and enhancing our customers' satisfaction.



Skills & Abilities:

  1.          Outstanding culinary talent with the ability to successfully execute all style of menus and cuisine.
  2.          Proven success managing food and labor cost in a kitchen according to budgeted targets.
  3.          Proven knowledge of ordering, prep lists, inventory management and labor scheduling.
  4.          Proven success building a team of competent professionals who are adaptable and positive.
  5.          Understanding of various cooking methods, ingredients, equipment and procedures.
  6.          Must possess excellent oral, written, and interpersonal skills.
  7.          Must possess the ability to interact with members and staff on all levels in a professional, positive, and friendly manner.
  8.          Position requires a highly professional demeanor, adaptability, flexibility and adherence to a strict level of confidentiality.
  9.          Ability to adhere to food service policies, procedures, and safety and sanitation.
  10.          Ability to comprehend and carry out instructions.
  11.          Ability to work as a team player and maintain a professional appearance at all times.
  12.          Ability to work all shifts, days, nights, weekends, and holidays.
  13.          Ability to read, write, see, speak, and hear English. Bilingual a plus.


         Experience a fine dining environment a plus.

         Seven (7) years in a supervisory experience as an in a similar environment required.



         Culinary Degree preferred or similar experience working under highly qualified chefs

         ServSafe Sanitation certification required



  •          Requires ability to bend, stoop, lift, balance and carry items up to 50lbs.
  •          Ability to assist in moving furniture when necessary.
  •          Ability to stand for prolonged periods of time.
  •          Ability to operate and handle a computer, wine opener, and other restaurant equipment.
  •          Ability to work with flammable materials, and toxic cleaning chemicals as well as sharp knives and other objects.
  •          Ability to move about freely on a multi-floor building.



  • Overall knowledge of the day to day management of the management of the Clubhouse
  • Assist Executive Chef with menu development, inventory and purchasing controls
  • Establishes controls to minimize food waste and theft
  • Assists Executive Chef in scheduling all kitchen associates and coordinates work to assure that food preparation is economical and technically correct
  • Develops and implements training for kitchen associates to increase their knowledge regarding food preparation, quality, service, sanitation and accident prevention principals
  • Skilled at catering to an exclusive, demanding clientele of a private club
  • Develops recipes; including signature dishes; and techniques for food preparation and presentation which assures a consistent quality and minimizes food cost; exercises portion control over all items served and assists in establishing menu selling prices
  • Takes corrective action where necessary to ensure that financial goals are met
  • Responsible for taking accurate inventory at the close of each calendar month
  • Evaluate food products to assure that quality standards are consistently achieved
